| Q: | Why choose yeast-free baking? |

French Meadow was one of the first yeast-free bakeries in the U.S. and continues their tradition of making all of their delicious, hearth-baked breads without the help of baker's yeast. This form of baking is healthier-not only for the large number of people who are allergic to baker's yeast, but for all of us. One significant health advantage to yeast-free bread is its value to digestion. While yeasted breads create, over time, an imbalance in our intestinal flora, yeast-free breads help to preserve that balance. And, as it contains strains of lactobacillus-an organism important for the proper digestion of complex carbohydrates-yeast-free bread is easier for our stomachs to break down and utilize. The natural leavening process is also beneficial for our bodies. Wheat grain contains phytic acid, a substance that has been linked to anemia, rickets, and nervous disorders. When bread is leavened naturally, 100% of the phytic acid is eliminated. The end result is a delicious loaf, naturally sour, naturally sweet, and naturally digestible. |
| Q: | What is the glycemic index? |
| A: | University of Toronto scientist Jenkins developed the concept in the early 1980s as a means to classify foods based on their potential to increase blood glucose in an effort to aid diabetics in diet selection, especially with respect to carbohydrate consumption. Even though clinical evidence supporting the benefits of a low GI diet is as yet inconclusive, there is a growing support that elevated blood glucose levels-believed to be created by high GI (mainly simple carbohydrate intensive) foods-contribute to a variety of maladies. A low GI diet would include breads and cereals of whole grains and plenty of fruits and vegetables. Most importantly, a low GI diet is marked by the absence of highly processed foods, most of which contain sugar. |

"Functional food" is a term for products that combine food with "nutraceuticals," thereby creating foods that promote human health beyond basic nutrition. Nutraceuticals are described as any substance that is a food or any part of a food that provides medical and/or health benefits, including the prevention and treatment of disease. |

| A: | Vegans (pronounced VEE-guns): do not eat animal products and by-products such as eggs, and dairy products. Vegans also do not eat fish and in some cases honey. Vegans should eat a variety of foods including whole grains, beans and nuts to replace the porteins in meat, milk and eggs and adding any of our delicious organic, yeast free and vegan breads will do the trick. | Q: | What does organic mean? |
| A: | Organic products are produced without use of pesticides, irradiation, or genetic engineering, while all-natural products are made without additives or preservatives. As of October 2002, the USDA regulates organic products; products must meet specific requirements to make either the "organic" or the "made with organic" ingredient claims. |

This ancient flour is made from the ancient durum wheat relative called Kamut® grain. When you incorporate our deliciously satisfying Organic Kamut® Bread into your diet, you’ll be enjoying the benefits of bread high in protein, amino acids, minerals, and a higher lipid content. Another benefit of this flour is that it can often be tolerated by people who are sensitive to wheat or who have wheat allergies. | A: | Why do we make Spelt products, the answer is simple, sometimes the original way is still the best. Spelt is an ancient grain in the wheat family, popular in Europe for centuries, and it is even referred to in the Bible. We make our popular Spelt breads and bagels because of the nutritional value of Spelt and its deliciously “nutty” taste. It is extremely water soluble, very high in B vitamins, and high in protein.
